CAULIFLOWER AND VEGAN SMOKED GOUDA SOUP


Servings: 4-6


Ingredients:

· 1 white or yellow onion, diced

· 1 garlic clove, minced

· 4 cups cauliflower florets

· 4 cups chicken-less broth (or vegetable broth)

· 1/2 block Aviva smoked Gouda, shredded


Steps:

1) In a big pot over medium heat sauté onion with a bit of oil until translucent

2) Add garlic and cauliflower, and sauté for a few minutes

3) Add broth and bring to a boil for 2-3 minutes

4) Lower the heat and let cook for around 15 minutes or until the cauliflower is tender

5) Add Aviva’s shredded smoked Gouda

6) Transfer to a blender and blend until smooth
