VEGAN SPANAKOPITA – GREEK SPINACH AND FETA TRIANGLES



Servings: 8 – 10 triangles

 

Ingredients:

 

·      8 sheets vegan phyllo or puff pastry dough

·      1 124 g package spinach

·      ½ block Aviva feta, shredded

·      2 garlic cloves, minced

·      1 small onion, finely chopped

·      ½ tsp. thyme

·      ½ tsp. oregano

 

Steps:

1.     Preheat oven to 350 F

2.     Sauté onion in a skillet with a bit of oil until translucent.

3.     Add the rest of ingredients except feta and continue to sauté

4.     Transfer to a bowl with the shredded feta

5.    Using a bit of oil, stick together 2 sheets of phyllo dough one on top of the other and cut in three strips. Working with one strip at time, put some of the filling in one end of the band and fold repeatedly forming a triangle. 

6.     Brush each triangle with oil and bake for 25-30 minutes or until golden.
